Spicy Roast Vegetables
A selection of your favourite vegetables
Fresh or dried chilli
Herbs and/or spices (fresh rosemary, oregano and cumin work really well)
Pre-heat oven to 180˚C
Chop the vegetables into bite sizes and finely slice the garlic and chilli
Place in a roasting dish with all the herbs and spices
Drizzle generously with the olive oil
Roast in the oven for approximately 40 minutes until the vegetables are beginning to crisp.
Serving suggestions, top tips and inspiration
Serve on its own, as a side with meat or fish, on a bed of salad, on crackers with hummus as a lunch box option… the opportunities are endless.
These roast vegetables are delicious in a frittata the next day (another brilliant lunch box option)
