Handful of fresh dill or your preferred fresh herbs chopped
¼ cup hulled tahini
Juice of ½ lemon
Chilli and pepper to taste
Cut salmon piece into cubes.
Toss salmon pieces in a bowl with sesame seeds, chopped fresh dill and a splash of olive oil.
Gently pour a generous glug of olive oil into a pan and heat.
When oil is hot, place fish skin side down to achieve crispy skin.
Allow to cook on low-medium heat until skin is crispy. Generally 4-5 minutes depending on the thickness of the fish. Once skin is crispy rotate each piece using tongs until all sides are golden. Generally salmon takes between 8 -12 minutes. You may choose to leave it a little pink in the middle or cook it all the way through. When the salmon flakes off the fork you know it is done.
Spoon tahini into a bowl
Add the lemon juice, 1 tablespoon of olive oil and a splash of water
Add pepper and chilli to taste
Mix all ingredients together
The consistency that you have your dressing is up to you (add water if you want it runny). Also have fun tasting and adding your favourite fresh chopped herbs or spices – make it yours!
Serve in your favourite lunch box accompanied by fresh lettuce leaves and sliced avocado. Pop the tahini dressing in a separate container and add as desired. If tahini is not for you, simply use your preferred dressing.
Feel free to add your own touch to the mix… for example, cucumber, sautéed greens, additional toasted seeds, or fresh herbs.
